Where possible I have put the gram weight of an ingredient and also its measurement in cups, or a physical count of it. This will help those cooks who don't have scales, but it should be remembered that in baking in particular, scales give a more reliable measurement. Cup measures, depending on whether you pack things in, or loosely fill them can vary.

In New Zealand, the USA and in England it should be noted that 1 tablespoon equals 15 ml, but in Australia, 1 tablespoon equals 20 ml. Where this is important, for instance in measurements of oil and vinegar the measurements are in mls first, then in tablespoons, so Australian readers should follow the first measurement (mls) to achieve the desired result. Measurements that won't affect the recipe, such as 1 tablespoon of parsley and so on, have not been converted as a little more or less won't tip the balance.
